The 3 Truths About Organic Wine
That No Producer Will Ever Tell You
Most organic vineyards, which don't use systemic products or herbicides to grow their grapes, border other lands where they use all these chemicals that persist in the soil.
All this will inevitably end up in the neighboring vineyard or other organic crop through the water absorbed by the soil.

It's commonly believed that "farmer's wine" is genuine because it's made the way it used to be.
Being in the industry and owning a farm with over 200 years of history, I can tell you that farmers do indeed make wine the way they used to be.
But even long ago, sulfites, herbicides, and chemicals were used, often superficially, even without proper dosage.
This is why drinking a wine "made the way it used to be" very often means drinking a wine made superficially.
A wine that's been processed even more than necessary and with little awareness of what's being done, with chemicals unknown to those who produce it, and often of mediocre flavor and quality, which causes headaches or heartburn after just one glass.
All winemakers want to maximize their vineyard yields with abundant harvests; they all want to maximize the income derived from each hectare of land.
However, this inevitably leads to a wine of extremely inferior quality.
If you don't thin out (remove bunches from the vine), the tightly packed bunches won't ripen perfectly (hence low alcohol content and high acidity).
Furthermore, among the dense bunches, you risk harvesting rotten and moldy grapes by machine, which will then be vinified and poured into a beautiful glass without your knowledge.
In fact, with large production runs, you're forced to use only machinery to harvest and process the grapes, and it's thus impossible to select the bunches from which to make the wine.
But many people don't care about this because no one will ever know.
We've decided to keep our production to a minimum, so as not to sacrifice the quality, safety, and unique flavor of our wine.
